The other day I was moving some boxes around and unearthed a box of Vegetable Gum which is used in cake decorating.
It’s a mix of Gum Acacia and Xanthan Gum and is used to harden Sugarpaste when modelling – it can also be used as a substitute for Gum Tragacanth and is Kosher certified.
This has a best before date of April 2013 so is rather old however, as you most likely know, when kept in a dark place these sorts of additives last for years.
